Made kidney bean pie with leek, mushroom, and sweet potato for a Thanksgiving potluck last night. Was partially inspired by my trip to a vegetarian sugar shack a few winters ago. Yet another instance of throwing stuff in a pastry shell and having it be delicious. Will repeat.
